Slow-cooked green lentils & red rice, with carrots and kidney beans

The lentil and red rice chili is super delicious. I especially like the carrot chunks; that's a nice addition. Besides being healthy and flavorful, this dish is also very filling. It was a tad spicy but my tolerance for spicy things is low so it probably would be just right for others who are used to spicy foods.
